Lauren brings over 25 years of extensive 'hands-on' experience in the food service industry. She has handled and managed all facets of food service, from sourcing and vendor management, to procurement and contract negotiations, to inventory control and distribution, to managing staffs and multi-million dollar budgets, to coordinating with corporate departments. Lauren covers the broad scale of food service operations: restaurants, dining rooms, cafeterias, quick service establishments, and third party operations. She brings a large base of knowledge and experience that heightens her ability to serve her clients well.

Lauren's work has resulted in exceptional food cost savings for her clients. These have ranged from 100-500 basis points reduction in food cost saving companies hundreds of thousand s of dollars.

Lauren's recent career experience included four years with The Walt Disney Company as Manager of Food & Beverage Sourcing for the Disneyland Resort and ESPN Zone restaurants. She has also served in several sourcing & procurement positions with companies including Fresh Choice, Inc. and El Torito Restaurants.

Lauren's consulting clientele has included Mimi's Café, Which Wich, BJ's Restaurants, RPM Pizza (largest franchisee in the U.S. for Domino's Pizza) and Sun Capital Partners private equity firm whose restaurant portfolio includes Bruegger's, Fazoli's, Restaurants Unlimited and Garden Fresh.
